My First Artichoke!

I've always been curious about artichokes.  I watch a LOT of FoodTV, and I've seen them prepared before...but for some reason, the prickly little suckers looked very intimidating to me, so I never tried them.  And nobody has every prepared one for me, either.  I've had artichoke hearts out of a jar, and of course, I've probably eaten VATS of cheese and artichoke dip...but really, could not have told you what an artichoke tasted like.  Well today, that all changed!

Kristin blogged about what she's eating, and got me thinking...and now, I am addicted!!  I just boiled my little friend in some water with lemon in it...dipped in a little butter...and YUM!!!  My kid was even standing over me, begging for bites!  Awesome!!

Until today, I would have told you my favourite green thing is an avocado.  And really, they still are (omg:  a half an avocado, cubed with a little lime juice on it - TOTALLY my favourite mushy, and SO filling!), but right now, I'm going to call artichokes a very close second!

Oh...and a little post script:  today I hit 60lbs down!  Yay!!

  2. YEAH for 60! Today was 60 for me as well - we are 60 sisters. :)

    And I LOVE artichokes...yummo! And avocado. And asparagus. I guess I have a thing for "A" veggies, although I really love brussel sprouts as well. Why am I fat? Oh yea, I also love chocolate.

  4. Woohoo...way to go Gilly. I love artichokes to but don't make them too often. My husband hates them and always says "anyone who eats artichokes outa choke!" Who needs to hear that when eating? I love them the way you made them and also the Italian way. We mix bread crumbs, parmesan, salt, pepper, chopped garlic, parsely and olive oil than stuff it all between the leaves until its so fat than put in a pot of water about 1 inch and steam for about 45 minutes. Delish!

  13. I know this may sound stupid, but how do you eat the artichoke? Don't you like drag the leaf thing betennd your teeth and eat the insides? I wouldn't know where to begin!
